TMJ Diet: Pumpkin Pudding

Plant-based puddings are a treat for those who want to stick to a whole-foods diet, but have difficulty chewing whole foods because of jaw pain or TMJ pain. Jaw problems make it difficult to chew whole foods. Creating plant-based soft food recipes from whole foods is a good solution. Store-bought puddings (even vegan ones) tend to be loaded with sugar, fat and artificial flavors. That’s why it’s always best to make your own. 

This pumpkin pudding recipe is perfect when you have leftover cans or aseptic boxes of prepared pumpkin! Agar-agar is a vegan ingredient and is used instead of gelatin to create a gel-like consistency. It’s produced from seaweed. This recipe is a “tad-sweet” so if you like it “sweeter” then add more maple syrup. PLANT-BASED+DAIRY

Pumpkin puree can be labeled as 100 percent pure pumpkin, pumpkin puree or solid pack pumpkin. Read the ingredient list and make sure it says just pumpkin.  Be careful not to buy canned pumpkin pie mix. Pumpkin pie mix contains sugar, salt and other flavors.

Pumpkin is low in calories, which makes it a weight-loss friendly ingredient. It’s brimming the antioxidant beta-carotene. Beta-carotene is responsible for its bright orange color. The body converts beta-carotene to vitamin A.  Studies indicate that a diet rich in foods containing beta-carotene may reduce the risk of developing certain types of cancer and heart disease. Beta-carotene is also considered to be anti-aging component of foods.

Pumpkin is an ideal ingredient for a healthy soft food diet. The smooth consistency makes it easy to eat when suffering with TMJ pain or general jaw pain. It can be used in smoothies, soups and even as a base for pasta sauce (mixed with ricotta cheese). It’s so easy to be creative when you have good ingredients to work with. So let’s get cooking!

TMJ Recipe: Pumpkin Pudding  


(Choose organic ingredients when available):

  • 1 & 1/2 cups of pumpkin puree
  • 1 cup of 1% (low-fat) milk or soymilk (for vegans)
  • 1 tablespoon agar-agar granules
  • 2 teaspoons pumpkin spice
  • 1/4 cup pure maple syrup
  1. Place milk and agar-agar in a saucepan and simmer for 2 to 3 minutes, whisking constantly.
  2. In a blender bowl, combine all of the ingredients including the milk with the dissolved agar-agar.
  3. Blend until smooth.
  4. Pour mixture into 6 to 8 individual bowls.
  5. Chill in fridge for at least 2 hours.
  6. Serves 6.

Optional: Top with additional maple syrup and whipped cream.
